Peking Duck Recipe
Ingredients:
Whole duck
Dry wine
Honey
1 bottle of hoisin sauce
Green onions
Mandarin pancakes
Instructions:
Prepare duck by loosening skin. Duck should be blanched for about 2 mins. Let the meat dry. This should take around 4 hrs. After duck is dry, baste with honey and water or using your dry wine. Let the meat dry again for around 4 hrs.
To Roast: First, roast at 375 degrees Farehnheit for half an hour, after which, roast again for an hr. at 250 degrees Farehnheit. The last roasting step is at 400 degrees Farehnheit for another half hour.
The meat is then ready for serving. Slice the meat and skin into 1×2″ pcs. Chop the green onions into 2 inch long pcs.
Prepare the mandarin pancakes. This is to be used for wrapping the meat, the green onion and the hoisin sauce. Each guest is to prepare his or her own piece.
